Time for another 7 Quick Takes! It’s been a busy week so I should have lots to talk about, right?
We headed back to school at the beginning of this week, which happened to coincide with the lovely weather that the Polar Vortex decided to dump on us. We slowly made our way back through the snow only to have classes cancelled for two days. Oh well, I’m not one to complain about a few days off.
I’ve been Pinteresting to my hearts content this week, taking advantage of the light schedule of the first week of classes. Busy class schedules don’t leave much time for cooking meals or packing lunches, so one of the projects was making salads in a jar for easy portability to class. I haven’t tried one yet, so I hope they’re good! Other projects in progress include baked oatmeal and individual-sized breakfast casseroles. Yum!
Wedding planning greatly benefited from our two snow days this week, as I made great progress in the hotel area, while discovering that there is a city-wide convention in town the weekend of the wedding and many of the hotels are booked. Talk about a headache. But disaster was averted and a hotel block has been secured. Reservations for the bridal party have not yet been confirmed but we’re close.
I hosted an Epiphany party on Saturday to celebrate our return to school and to host a white elephant gift exchange that we hadn’t managed to schedule before the end of last semester. I took this opportunity to try out some new Pinterest recipes. I made Ham and Swiss pinwheels, chipped beef and cream cheese pinwheels, and Apple Feta Honey Bruschetta, which I kind of made up based on similar recipes I’ve seen. I think the Bruschetta was my favorite; the saltiness of the feta mixed with the sweetness of the honey was delicious.
I also made a Berry Peach Sangria and some gourmet jello shots.
Downton Abbey has finally returned and my Sunday nights are all the happier for it! I love everything about that show, the fashions, the food, the way they talk, the history behind it, everything! I realize that it is a teensy bit overly dramatic. Okay, quite a bit. But I love it anyway!
This past Saturday, January 11th, 2014, marks the fourth year that I have been dating/courting my beloved fiancé. After having it in my head for about two weeks that the 11th was friday (which it wasn’t), I suggested that we stay in for a nice meal and a movie to celebrate, rather than going out for dinner. I made buttered green beans, garlic mashed potatoes, lemon garlic pork loin and mini cheesecakes.
I gave the FI his anniversary gift, which was a bow tie and button down from Brooks Brothers, a high end menswear store that he loves but would never buy himself anything from. My gifts apparently have not arrived yet, thank you UPS, so I have been forced to wait in torment. Sigh. No respite for the impatient.
It’s only been one week since the crazy Polar Vortex storm and almost all the snow is gone, it is a mud filled swamp outside and the temperatures are in the 30s. Weather. I’ll never understand it.
